Ingredients 

Main Ingredients

  • 1 tablespoon Vegetable oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, grated
  • 2 cups Chicken broth
  • 1 can Coconut milk
  • 1 tablespoon Fish sauce
  • 1 tablespoon Lime juice
  • 1 cup Mushrooms, sliced
  • 1 cup Chicken breast, cooked and shredded
  • 1 Red chili, sliced optional
  • 1 handful Cilantro, chopped for garnish

Instructions 

  1. Heat the oil in a pot over medium heat. Add the onion and cook until soft.
  2. Add the garlic and ginger, cook for another minute.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the coconut milk, fish sauce, lime juice, and mushrooms. Simmer for 10 minutes.
  5. Add the cooked chicken and chili, simmer for another 5 minutes.
  6. Serve hot, garnished with cilantro.
