  • 2 large cucumbers sliced thinly
  • 1 medium red onion sliced thinly
  • ¼ cup cilantro chopped
  • ¼ cup rice vinegar
  • 2 tablespoon sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon red pepper flakes

Instructions 

  1. In a large mixing bowl, combine the sliced cucumbers, red onion, and chopped cilantro.
  2. In a small bowl, whisk together the rice vinegar, sugar, soy sauce, sesame oil, and red pepper flakes until the sugar is dissolved.
  3. Pour the dressing over the cucumber mixture and toss to coat evenly.
  4. Let the salad sit for at least 10 minutes before serving to allow the flavors to meld.
