Add cold water, one tablespoon at a time, until the dough comes together. Form into a ball, wrap in plastic, and chill for 15 minutes.
Roll out the dough on a floured surface and fit it into a pie dish. Trim the edges.
In another bowl, whisk together the eggs, heavy cream, salt, and pepper.
Spread the shredded mozzarella cheese evenly over the crust. Arrange the halved cherry tomatoes and chopped basil on top.
Pour the egg mixture over the tomatoes and basil.
Bake in the preheated oven for 35-40 minutes, or until the quiche is set and golden brown on top.
