Traditional Mexican Molletes
Molletes are a traditional Mexican open-faced sandwich, perfect for breakfast or a snack.

Main Ingredients
- 4 pieces Bolillo rolls sliced in half
- 1 cup Refried beans
- 1 cup Shredded cheese like Oaxaca or Monterey Jack
- 1 cup Pico de gallo
Preheat the oven to 350°F (175°C).
Spread a layer of refried beans on each bolillo half.
Top with shredded cheese.
Place the bolillo halves on a baking sheet and bake for 10 minutes, or until the cheese is melted and bubbly.
Remove from the oven and top with pico de gallo. Serve immediately.
