Ingredients

  • 4 Eggs
  • 1 cup Greek Yogurt plain
  • 2 tablespoon Butter
  • 1 teaspoon Paprika or Aleppo pepper
  • 1 clove Garlic minced
  • 1 tablespoon Fresh Dill chopped
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Fill a saucepan with water and bring to a gentle simmer. Add a splash of vinegar.
  2. 2. Crack the eggs into small bowls and gently slide them into the simmering water. Poach for about 3-4 minutes.
  3. 3. In a mixing bowl, combine the Greek yogurt, minced garlic, salt, and pepper. Spread the yogurt mixture onto serving plates.
  4. 4. In a small skillet, melt the butter and add the paprika or Aleppo pepper. Cook until the butter is foamy and the spices are fragrant.
  5. 5. Remove the poached eggs from the water with a slotted spoon and place them on top of the yogurt mixture.
  6. 6. Drizzle the spicy butter sauce over the eggs and yogurt. Garnish with fresh dill.
