Ingredients 

Main Ingredients

  • 1 cup Red Lentils
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 2 cups Vegetable Broth
  • 1 cup Diced Tomatoes canned
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 2 tablespoon Olive Oil

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. 3. Add the minced garlic and cook for another minute.
  4. 4. Stir in the cumin, paprika, salt, and black pepper.
  5. 5. Add the red lentils, vegetable broth, and diced tomatoes. Bring to a boil.
  6. 6. Reduce the heat to low and let it simmer for about 20-25 minutes, or until the lentils are tender.
  7. 7. Adjust seasoning if needed and serve hot.
