Ingredients 

Main Ingredients

  • 4 cups Potatoes, diced about 4 medium potatoes
  • 2 cups Carrots, sliced about 3 large carrots
  • 1 cup Celery, chopped about 2 stalks
  • 1 cup Onion, chopped about 1 large onion
  • 4 cups Vegetable broth
  • 2 cloves Garlic, minced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Thyme
  • 1 teaspoon Rosemary

Instructions 

  1. 1. Heat a large pot over medium heat. Add a splash of oil.
  2. 2. Add the onions, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. 3. Add the garlic and cook for another minute.
  4. 4. Add the potatoes, vegetable broth, salt, pepper, thyme, and rosemary. Bring to a boil.
  5. 5. Reduce heat and simmer for 30-35 minutes, or until potatoes are tender.
  6. 6. Adjust seasoning to taste and serve hot.
