Main Ingredients
- 4 cups Potatoes, diced about 4 medium potatoes
- 2 cups Carrots, sliced about 3 large carrots
- 1 cup Celery, chopped about 2 stalks
- 1 cup Onion, chopped about 1 large onion
- 4 cups Vegetable broth
- 2 cloves Garlic, minced
- 1 teaspoon Salt
- 0.5 teaspoon Black pepper
- 1 teaspoon Thyme
- 1 teaspoon Rosemary
1. Heat a large pot over medium heat. Add a splash of oil.
2. Add the onions, carrots, and celery. Cook until softened, about 5-7 minutes.
3. Add the garlic and cook for another minute.
4. Add the potatoes, vegetable broth, salt, pepper, thyme, and rosemary. Bring to a boil.
5. Reduce heat and simmer for 30-35 minutes, or until potatoes are tender.
6. Adjust seasoning to taste and serve hot.
