Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 Carrots, sliced
  • 2 Celery Stalks, sliced
  • 3 cloves Garlic, minced
  • 4 cups Vegetable Broth
  • 1 can Diced Tomatoes
  • 1 teaspoon Dried Basil
  • 1 teaspoon Dried Oregano
  • 1 cup Green Beans, chopped
  • 1 cup Corn Kernels
  • 1 cup Peas
  • to taste Salt and Pepper

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. Add the garlic and cook for another minute.
  4. Pour in the vegetable broth and diced tomatoes. Bring to a boil.
  5. Add the basil, oregano, green beans, corn, and peas. Reduce heat and simmer for 20 minutes.
  6. Season with salt and pepper to taste. Serve hot.
