- 1 can chickpeas drained and rinsed
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- 0.5 teaspoon garlic powder
- Salt and pepper to taste
- 8 small tortillas
- 1 cup shredded lettuce
- 0.5 cup diced tomatoes
- 0.25 cup chopped cilantro
- 0.25 cup crumbled feta cheese
- Lime wedges for serving
Heat olive oil in a skillet over medium heat.
Add chickpeas, cumin, paprika, garlic powder, salt, and pepper.
Cook for 5-7 minutes, stirring occasionally, until chickpeas are slightly crispy.
Warm tortillas in a separate pan or microwave.
Assemble tacos by adding chickpeas, lettuce, tomatoes, cilantro, and feta to each tortilla.
Serve with lime wedges.
