  • 4 Eggs
  • ¼ cup Chopped bell peppers
  • ¼ cup Chopped onions
  • ¼ cup Chopped tomatoes
  • ¼ cup Spinach
  • ¼ cup Shredded cheese
  • 1 tablespoon Butter
  • to taste Salt and pepper

Instructions 

  1. 1. Crack the eggs into a mixing bowl and whisk until well beaten.
  2. 2. Add the chopped vegetables and cheese to the eggs. Season with salt and pepper.
  3. 3. Heat the butter in a non-stick skillet over medium heat.
  4. 4. Pour the egg mixture into the skillet and cook until the edges start to set.
  5. 5. Use a spatula to gently lift the edges and let the uncooked eggs flow underneath.
  6. 6. Once the omelet is mostly cooked, fold it in half and cook for another minute.
  7. 7. Serve hot.
