Vermicelli Noodle Bowl Recipe

Main Ingredients
- 200 g vermicelli noodles
- 200 g shredded carrots
- 1 cup bean sprouts
- 1 cup cucumber, julienned
- 1 cup fresh herbs (mint, cilantro, basil)
- ¼ cup crushed peanuts
- ¼ cup fish sauce
- 2 tablespoon lime juice
- 1 tablespoon sugar
- 1 clove garlic, minced
- 1 tablespoon soy sauce
1. Cook vermicelli noodles according to package instructions. Drain and set aside.
2. In a mixing bowl, combine fish sauce, lime juice, sugar, garlic, and soy sauce to make the dressing.
3. In a large bowl, mix cooked noodles, shredded carrots, bean sprouts, cucumber, and fresh herbs.
4. Pour the dressing over the noodle mixture and toss to combine.
5. Serve in bowls and top with crushed peanuts.
