- 2 lbs apricots pitted and chopped
- 2 cups sugar
- 2 tablespoon lemon juice freshly squeezed
1. In a large pot, combine apricots, sugar, and lemon juice.
2. Cook over medium heat, stirring constantly, until the mixture thickens and reaches the desired consistency, about 45 minutes.
3. Remove from heat and let cool slightly before transferring to jars.
4. Seal jars and store in the refrigerator.
