Ingredients 

Main Ingredients

  • 3 lbs Beef chuck roast
  • 3 cups Beef broth
  • 5 cloves Garlic minced
  • 1 large Onion chopped
  • 2 tablespoon Apple cider vinegar
  • 2 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 teaspoon Dried oregano
  • 1 teaspoon Ground cumin
  • 3 pieces Bay leaves
  • 5 pieces Dried guajillo chiles stemmed and seeded
  • 3 pieces Dried ancho chiles stemmed and seeded
  • 1 piece Cinnamon stick

Instructions 

  1. 1. Preheat oven to 350°F (175°C).
  2. 2. In a large pot, add beef, beef broth, garlic, onion, vinegar, salt, pepper, oregano, cumin, bay leaves, guajillo chiles, ancho chiles, and cinnamon stick.
  3. 3. Bring to a boil, then reduce heat and simmer for 2.5 to 3 hours, until beef is tender.
  4. 4. Remove beef and shred with forks. Strain the broth and blend the solids until smooth. Return broth and beef to the pot.
  5. 5. Serve hot with tortillas, lime, and chopped onions.
