Ingredients

  • 1 tablespoon Olive oil
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1 can Black beans, drained and rinsed (15 oz)
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 4 large Flour tortillas
  • 1 cup Shredded cheese
  • 1 cup Salsa
  • 1 cup Sour cream

Instructions 

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the diced onion and cook until softened, about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Stir in the black beans, cumin, and chili powder. Cook for 5-7 minutes, until heated through.
  5. Warm the tortillas in a dry skillet or microwave.
  6. Spoon the black bean mixture onto each tortilla, then top with shredded cheese, salsa, and sour cream.
  7. Roll up the tortillas and serve immediately.
