  • 1 large Butternut Squash peeled, seeded, and cubed
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 1 cup Coconut Milk
  • to taste Salt and Pepper

Instructions 

  1. 1. In a large pot, heat a bit of oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. 2. Add the cubed butternut squash and vegetable broth. Bring to a boil, then reduce heat and simmer until the squash is tender, about 20-25 minutes.
  3. 3. Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth.
  4. 4. Stir in the coconut milk and season with salt and pepper to taste. Simmer for another 5-10 minutes to let the flavors meld.
  5. 5. Serve hot, garnished with a drizzle of coconut milk or a sprinkle of fresh herbs if desired.
