Chicken Posole
A hearty Mexican soup made with chicken, hominy, and a flavorful broth.

Main Ingredients
- 2 lbs Chicken Thighs boneless, skinless
- 1 can Hominy drained and rinsed
- 1 large Onion chopped
- 4 cloves Garlic minced
- 6 cups Chicken Broth
- 2 tablespoon Olive Oil
- 1 teaspoon Oregano dried
- 1 teaspoon Cumin ground
- 1 teaspoon Salt or to taste
- ½ teaspoon Black Pepper ground
- 1 cup Cilantro chopped, for garnish
- 1 whole Lime cut into wedges, for serving
1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
2. Add minced garlic and cook for another minute.
3. Add chicken thighs to the pot and cook until browned on all sides.
4. Pour in chicken broth and bring to a boil. Reduce heat and simmer for 20 minutes.
5. Add hominy, oregano, cumin, salt, and pepper. Simmer for another 15 minutes.
6. Remove chicken thighs, shred them, and return to the pot. Stir well.
7. Serve hot, garnished with chopped cilantro and lime wedges on the side.
