  • 6 cups potatoes, peeled and cubed
  • 1 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 1 cup celery, chopped
  • ½ cup onion, chopped
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 4 units hard-boiled eggs, chopped

Instructions 

  1. 1. Boil potatoes in a large pot until tender, about 10 minutes. Drain and cool.
  2. 2. In a large mixing bowl, combine mayonnaise, mustard, celery, onion, salt, and pepper.
  3. 3. Add cooled potatoes and chopped eggs to the bowl. Mix gently to combine.
  4. 4. Chill in the refrigerator for at least 1 hour before serving.
