1. Heat the oil in a large pot over medium heat.
2. Add the goat meat and brown on all sides.
3. Remove the meat and set aside.
4. In the same pot, add the onions and garlic, and sauté until softened.
5. Return the meat to the pot and add the beef broth, tomatoes, carrots, potatoes, salt, pepper, paprika, and thyme.
6. Bring to a boil, then reduce heat and simmer for 2 hours, or until the meat is tender.
7. Adjust seasoning as needed and serve hot.
