  • 1 cup mashed sweet potatoes
  • 1 cup all-purpose flour
  • 1 cup milk
  • 2 eggs
  • 2 tablespoon sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 2 tablespoon butter melted

Instructions 

  1. In a mixing bowl, combine the mashed sweet potatoes, flour, milk, eggs, sugar, baking powder, salt, cinnamon, and nutmeg. Mix until smooth.
  2. Heat a skillet over medium heat and lightly grease with butter.
  3. Pour ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  4. Serve warm with your favorite toppings.
