Salad Ingredients
- 2 cups Mixed greens
- ½ cup Shelled pistachios roughly chopped
- ¼ cup Cranberries dried
- ¼ cup Feta cheese crumbled
Dressing Ingredients
- 3 tablespoon Olive oil
- 1 tablespoon Lemon juice freshly squeezed
- 1 teaspoon Honey
- 1 teaspoon Dijon mustard
- to taste Salt and pepper
1. In a large mixing bowl, combine mixed greens, pistachios, cranberries, and feta cheese.
2. In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and pepper.
3. Pour the dressing over the salad and toss to combine.
4. Serve immediately and enjoy!
