Ingredients

  • 1 lb Chicken Breast diced
  • 2 cans Great Northern Beans drained and rinsed
  • 1 can Corn drained
  • 1 cup Chicken Broth
  • 1 cup Sour Cream
  • 1 cup Shredded Cheese
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste

Instructions 

  1. 1. In a large pot, cook the diced chicken breast over medium heat until no longer pink.
  2. 2. Add the beans, corn, and chicken broth to the pot. Stir to combine.
  3. 3. Stir in the cumin, chili powder, garlic powder, onion powder, salt, and black pepper. Bring to a simmer.
  4. 4. Reduce heat and let it cook for about 20 minutes, stirring occasionally.
  5. 5. Remove from heat and stir in the sour cream and shredded cheese until melted and well combined.
  6. 6. Serve hot, garnished with additional cheese or sour cream if desired.
